In Our Glasses

The colors are starting to change here in New England and we’ve noticed some shifts in what we’re drinking. Here are the top bottles we’re popping at couch + cork.

Sparkling Wine

It’s no secret that when we’re popping bubbly it’s usually Crémant de Limoux but during fall we actually really love swapping to the slightly effervescent wines of Portugal’s Vinho Verde region. White or sparkling, they’re all good. These wines go especially well with spicy fare.

White Wine

We can’t get enough White Bordeaux from Graves right now. White Bordeaux (Bordeaux Blanc) is a blend of Sauvignon Blanc and lesser-known Sémillon. Unlike Sauvignon Blanc from Australia/New Zealand the Graves terroir gives the wine more of an herbal nose and palate. Sémillon rounds it out, in a way that is just perfect for fall. Serve it around 60° (no, REALLY) with fish, seared foie, scrambled eggs with truffle oil, fettuccine alfredo or asparagus risotto!

Rosé Wine for Fall

We refuse to relegate rosé to the summer. When the temps get a little bolder, so does our pink wine. Look for rosé from outside of Provence, and made with a single varietal. For us it’s Tempranillo from Spain that’s in our glasses more than anything else. These go surprisingly well with savory cookies and breads made with pumpkin and other squash but also work with vegetarian fare like mushroom-stuffed eggplant.

Our Go-To Reds

Sure we love Cali and Bordeaux. And Sangiovese? It speaks to us on a cellular level. But… we’re #geekedongreek and when it comes to Greek wine in the fall we just can’t pass up Xinomavro from Naoussa. It’s fruity and light when young but as it ages it does some pretty insane science in the bottle and just keeps getting better. Keep the food pairings simple, fresh and Greek-inspired like tomatoes with capers and really good olive oil, lamb or a charcuterie that includes stuffed grape leaves, real feta and lots of olives.
